Balanced, fruity, very fresh flavour with hints of barrel, green apples, gooseberries, pears, galia melon, butter, macadamia nuts and grilled lemon.

Lotima Ivory 2021 is our first barrel-fermented wine where the ripe Solaris grapes from our vineyard in Allerum were carefully destemmed and crushed and then allowed to rest on the skins in an oxygen-free environment for 6 hours before pressing. The wine fermented slowly and coolly in new Seguin Moreau barriques for 2 weeks and then rested on the fine lees for 11 months with regular battonage. Another 9 months in oak barrels before bottling in June 2023. A wine produced under the "low intervention" method which means that we made minimal impact and let the wine find its own balance, style and aroma profile.
