Nuanced, fruity, very fresh flavor with hints of green apples, pears, gooseberries, honeydew melon, herbs and lime.
The grapes were hand-harvested on October 4, 2021. After destemming and crushing, skin contact was carried out for 8 h to extract aromas, depth and color. In this wine, only the self-run juice was used, which was allowed to settle for 48 hours before fermentation started with a neutral yeast. After fermentation, the wine was aged in stainless steel tanks for 20 months, of which sur lie 10 months with regular batonnage, ie stirring of the yeast.
Our vision with this wine is to show how Solari's primary aromas taste where the long aging on the lees with regular stirring creates a mouth filling that can balance the fresh acidity.
