Lotima Perlé brut 2021 is our first sparkling wine made using the traditional method. For our sparkling wine, we have chosen the Souvignier gris grape for its neutral profile. After the grapes were hand-harvested in October 2021, the must was de-stemmed, pressed and fermented in stainless steel. After fermentation, the wine rested 4 months with regular batonnage. Then the wine was bottled with a liqueur de tiragei.e. a start of yeast, yeast nutrient and sugar to ferment up to 6 bars of pressure in bottle. The bottles have then rested in the cellar of Kronovall's wine castle for 36 months and degorgement takes place in April 2025 before the launch in May 2025. Then the neck of the bottle is frozen and the yeast is pushed out. Before we put in the cork and grimma, liqueur d'éxpedition is added, liqueur d'éxpedition, which, among other things, balances the fruit acidity and replaces the wine that has been pushed out.
